Smashed Cucumbers 拍黄瓜

Reggie

1. Cut 8 Gherkins or seedless English cucumbers into bite size strips

2. Mix w/salt, let rest 30 minutes

3. Drain, put into plastic bag, lightly smash with flat part of cleaver or flat

side of meat tenderizer

4. Marinate in 2 tbp soy, 2 tbs rice vinegar, 1 tsp sesame oil, 1 tsp sugar,

2 large mashed garlic cloves, red pepper flakes (vary proportions

according to your taste)

5. Cover, refrigerate overnight (this can last many days)

Tea Eggs 茶鸡蛋

  1. Soak eggs in water 10 minutes to reach room temperature.

  2. Put  eggs in steamer with bowl of vinegar and salt

  3. Dissolve salt in water in the steamer pot

  4. Place eggs in steamer pot, turn on heat

  5. After water boils, steam 6 mins for soft boil, 9 minutes for hard boil.

  6. Put eggs in ice bath to cool 5 minutes.  (Cooking eggs this way makes it easier to peel.

  7. In separate pot simmer 10 mins: lt & dk soy, bay leaves, ginger, Sichuan peppercorns, pu-erh tea leaves (dk tea bags), sugar, salt, shoaxing wine, cinnamon stick, star anise, cloves, 5-spice powder.  Remove tea bags, let cool.

  8. Use back of spoon to crack egg shells, soak in marinade.  After 24 hrs take eggs out of marinade and peel off shell.

 Indian Rice in Rice Cooker

  1. Stir fry in oil and butter minced garlic, 1 bay leaf, small stick of cinnamon, cumin seeds

  2. Add sliced onions medium heat stir a few minutes

  3. Add grated ginger low heat stir a few minutes

  4. Add 1 12 tsp turmeric, 2 tsp salt

  5. Let cool, then discard bay leaf and cinnamon stick

  6. Add to rice and water (2 cups level)  in rice cooker

Great Wall Drumsticks

Recipe from Susan's (72) cook at her Great Wall house in Beijing

  1. Marinate overnight DRUM STICKS w/crushed GINGER, chopped SCALLIONS, SALT, COOKING WINE, SOY SAUCE, 5-SPICE POWER,  BROWN SUGAR.

  2. Bake in 425º oven for 20 min

  3. Increase oven to 500º bake 10-12 min.
